RECIPE OF THE MONTH

PAELLA

Impress your family and friends with this traditional Spanish paella. There is quite a lot of preparation involved but the end result is well worth it.                            
You will need: 3 boneless skinless chicken thighs. 1 boneless skinless chicken breast.  1 onion, chopped. 1 red pepper, diced. 1 green pepper, diced. 2 cloves garlic, crushed. 2 large tomatoes, skinned, deseeded and diced. 375g (12oz) paella rice. 900ml (1 1/2 pints) chicken stock . 250g (8oz) mixed seafood (squid, mussels, shrimp). 250g raw tiger prawns, shelled. 6 langoustines. 450g (1lb live mussels). Pinch of saffron. 2 tblsp flat leaf parsley. Salt & pepper. Lemon wedges to serve.
